Avocado Sushi Cake

Ingredients:

2 cups cooked sushi rice

1/4 cup rice vinegar

1 tsp sriracha (for a spicy kick)

1 avocado, diced

6 oz spicy tuna or crab salad

1 small jalapeño, thinly sliced

1 sheet nori, crumbled

Spicy mayo and eel sauce (for drizzle)

Chopped green onions (for garnish)

Instructions:

Prepare the Rice:

Mix sushi rice with rice vinegar and sriracha for a hint of spice.

Assemble the Layers:

Add half the rice to a pan. Spread spicy tuna or crab salad, diced avocado, and crumbled nori. Top with remaining rice.

Top and Serve:

Garnish with jalapeño slices, drizzle spicy mayo and eel sauce, and sprinkle with green onions.
