Blueberry-Buttermilk-Breakfast-Cake

*Ingredients:


+To prepare this recipe, you will need the following ingredients:

°bread

°2 1/3 cups 100% whole wheat flour (more if needed)

°1/3 cup oats

°1 2/3 cups 1�t milk (or milk)

°2 eggs

°1/4 cup sugar

°1 1/2 teaspoons baking powder

°1 teaspoon baking soda

°1/3 cup unsweetened apple juice

°1/4 cup vegetable oil

°pinch of salt

°2 cups of fresh blueberries

°juice of half a lemon

°peel 1 lemon

°creamy

°2 cups 0�t no added sugar, regular or blueberry yogurt


°The flavor of half a lemon with its juice

°1 tablespoon honey or maple syrup

breadHeat oven to 400 degrees F.

In a bowl, combine sugar, milk (or yogurt), applesauce, oil, lemon juice, peel, and eggs.

In another bowl, mix all the dry ingredients (except the blueberries) and add them to the liquid mixture. Mix until the mixture becomes homogeneous.

If it is too runny, add flour and/or oatmeal

Adding blueberries and mix gently.Line an 8″ x 4″ loaf pan with parchment paper and pour in the mixture.

Bake for 35 to 45 minutes, until the bread is golden and a toothpick in the bread comes out clean.
